Reply with quote | #80 | Having just put my Tagliatelle Lusinghiere where my EVOO is---with oodles of fresh garlic, chillies and a vintage chunk of Parmesan grated into the whole. So, need I say more? O sole mio. It was great to see Boy George O'Dowd on Jonathan Ross last night. Sober,funny and humble--he handled himself brilliantly, answering questions honestly and easily,with great ease ,confidence and humour, on very difficult, potentially thorny subjects. Back at the top of his game. I love to see that. |

I recommend another quick and easy recipe. 1st step cook some pancetta (fresh, not smoked bacon) in a hot pan with a little of EVOO until it fizzles, add crushed chillies. Add some white wine and make it evaporate. When it's ready, put it aside. Keep the oil in the pan. Cook the pasta in the meanwhile. 2nd step Cook some tomato sauce or crushed canned tomatoes in that oil, until it's done. 3rd step mix everything! Put the pasta into this pan, add the saved bacon, mix everything. Remove from fire, add parmesan cheese and black pepper. (note: always add parmesan cheese out of fire, or when the pasta is already on the plate, otherwise it will melt. Unless you want to make a creamy tomato sauce) I measure everything "by eye". I usually take a handful of pancetta per person and 1 chilli.

Reply with quote | #88 | oh I was forgetting: always add a little of sugar (a teaspoon's point-ful) when you make tomato sauce/salsa. It helps removing the acid note from tomato. Sorry, I forgot that. Sometimes I take things for granted, but maybe not everybody know the little secrets I know. About cooking of course..... __________________ Love,

I'd better tell how to cook Carbonara spaghetti: cook spaghetti the usual way in the meanwhile cook: "squared" bacon (cut slices to make small rectangles or squares. Tastes better with thick slices), very little EVOO. 1 handful per person. Until fizzling, then set it aside. in a bowl: mix 1 yolk (per person) with salt, pepper and a very little milk to make it smoother. (some people use fresh cream. Wrong wrong!) Add some parmesan cheese to make a cream. when the pasta is ready, drain, put it again in its pot (not on fire) and add bacon + egg mixture. Mix until the egg is creamy...it mustn't cook completely, that's why you have to mix out from fire. Eat immediately while it's hot! 
(I think that there can be vegetarian substitutes for egg and bacon) __________________ Love,
